“The New Beef Bourguignon” Recipe

Surprisingly tasty mashup of Shepherd's Pie and Beef Burgundy. Another Instant Pot recipe that we love! Lady Jupiter Podcast Episode Two.Ingredients

  • 2lbs cubed stew beef
  • Salt & pepper
  • bacon fat for sautéing
  • ~8oz mushrooms, chopped
  • 1 onion, diced
  • 1 celery heart, chopped
  • ~1Tbsp herbes de Provence
  • 1/2tsp dried thyme
  • 8oz pinot noir
  • 12oz frozen peas
  • Garlic mashed potatoes (made ahead)

Directions

  1. Lightly broil cubed beef, just enough to sear some edges – the bottoms will be raw
  2. Place beef in Instant Pot, toss with salt and pepper
  3. Add wine, herbes de Provence, and thyme
  4. In a large skillet on the stove, sweat onion in about 1Tbsp bacon fat (or other if you prefer, bacon is recommended for the beef burgundy)
  5. As onion becomes translucent add celery and mushroom
  6. Continue stirring until well combined and soft
  7. Turn off heat and place sautéed veggies on top of beef and wine (liquid and all)
  8. Do not stir – seal lid and cook on high pressure for 30 minutes
  9. When cooking time is complete, reheat mashed potatoes
  10. Manually release pressure from Instant Pot
  11. Add frozen peas, and change cooking mode to Sauté
  12. Stir well and bring to boil for a minute, turn off Instant Pot
  13. Serve on a bed of garlic mashed potatoes

✤ Ramen Egg Recipe

Ramen egg recipe! Tasty within half an hour, magical overnight. Lady Jupiter Podcast Episode Two.Ingredients

  • 3-4 eggs, refrigerated
  • 1Tbsp soy sauce or tamari
  • 1Tbsp rice vinegar
  • Dash sesame oil

Directions

  1. In Instant Pot place 1 cup water and egg holder
  2. Add cold eggs to Instant Pot, seal lid
  3. Cook on manual high pressure for two minutes
  4. Quick pressure release, then halt cooking under cold running water or ice bath
  5. Combine liquids while eggs cool (sandwich bag is best)
  6. Carefully peel cooled eggs, place eggs in sauce bag
  7. Lightly vacuum-seal the sandwich bag closed – remove air from bag so the soy/vinegar/sesame blend is in closer contact with the peeled eggs
  8. Marinade at least a few minutes before serving; overnight is best – but just one night
